once it’s grown, then what?
i hope that basil is still alive. here’s something i made the other night while thinking about what i should plant.
grilled caprese sandwich!
ingredients: bread, fresh basil, fresh tomatoes (sliced if large, halved if cherry), balsamic vinegar, mozzarella cheese (or tofu cheese, you hippie)
marinate the tomatoes in the balsamic vinegar for about 30 minutes. if you have time to kill, reduce the vinegar/tomato water down by about half until it is thick and syrupy. if you don’t, just drain the tomatoes.
chop the basil finely and mix with the tomatoes.
assemble sandwich and either drizzle the cheese with your balsamic syrup or don’t.
butter or margarine on the outside of the sandwich, then pan-fry until crisp and golden! serve with additional balsamic vinegar for dipping or drizzling or whatever.
